SIMO 8″ Chef Knife Hand Forged Carbon Steel Solingen 1950 60s

Hand forged on a spring hammer after being drop forged and hand ground SIMO brand chef knife with the post war handle shape of the 1950s and 60s (round transition from bolster to handle) with a lot of taper on the blade spine and a bit on the handle tang. This is the ideal size for many cooks but is one of the hardest to find in still usable condition. This one is in very lightly used condition making it much rarer than a larger 10 or 12″ knife of its age. 

This knife has been thinned behind the edge a little but did not require major work. This is the style of chef knife with a much thicker heel than tip half providing a tough heel for butchery and a fine tip half for vegetable work.
