Unused Kokaji Togue Hiroshi 180mm Gyuto from approx 1990s to 2010 with monosteel blade and pakka handle
Most likely made with a SK carbon tool steel blade which will sharpen easily, provide good toughness and hold an edge well. Thin and yet slightly tough, a classic post Tokyo Seki made Kanto Gyuto, similar to what gets called ‘Nihonkou’ by several makers these days.
Knife is unused but the box has been beaten up a little.
