11.5″ chef de chef / lobster splitter heavy chef knife with stainless blade and pinned rosewood handle marked “La Cornue” a high end French stove manufacturer. This would have been made for them as they are not a knife maker, it looks to have been hand forged and hand ground, its heavy blade tapering steeply along the spine and tang. It is possible this is much older but had the marking put on in 90s to 2000s the construction is very old style.
This knife would be used for tough work in lieu of a cleaver; separating lamb chops, splitting lobsters, separating primal cuts at the joints during whole animal butchery etc.
Condition is excellent, it looks unused, note that there are some slight irregularities in the straightness of the edge, nothing to make it defective but it is very hand made with certain allowances for irregularities baked in.
