This one-of-a-kind set by the well-known California artist Don Carlos Andrade features an Alsace-inspired, 208mm French chef knife and matching 113mm utility / butcher’s knife. In his recognizable style, complete with satin finished, high-performance stainless steel blades perfect for cooking indoors and out, and trademark ‘dot’ inlaid handles of white G10 with Don’s triple rivet motif carvings, this pair of culinary tools represents the crème de la crème of daily-use blades for the home or professional kitchen. Hard, razor sharp edges sit beneath Don’s incredible freehand convex bevel geometry, pronounced and robust for the toughest jobs, combined with full-distal blade spine tapers, and nearly invisible secondary bevels for finesse and cutting precision. Produced in small batches by Damasteel in northern Sweden, the chef blade’s RWL-34 stainless alloy is renowned for its use in edged wares, Don hardening it in-house to 59-60 HRC, while the butcher blade is shaped from CTS-XHP powder stainless steel, made by Philadelphia, Pennsylvania-based Carpenter Technology, and hardened to 60-61 HRC. Rounded, polished blade spines and finely honed tips cap the business end of each. Taking his queues from the Alsace-style kitchen knives of past centuries, Don creates handsome, comfortable, and ergonomic grips with what we would call an East-meets-Wester fusion. Tried and true over the past several years of his artistry, Don’s wa-style shield handle profiles are sculpted by hand and secured to steel such that the chef blade’s heel drops from within the handle, while the butcher enjoys additional finger protection given its hard-use prospects. Embellishing each grip are the triple rivet carvings, inlays of ‘Lunar’ acrylic, and crisp, elegant detailing front to back. Handmade cloth-covered sayas are included.
